Buttermilk Pancakes

Went to the grocery store yesterday to pick up all the stuff needed to bake for the photoshoot (I'm so excited!).  As usual, I woke up at 6am this morning to bathe and feed baby no.2 before putting her back to sleep. Since there's still time to make breakfast, I decided to make some pancakes.

This is so quick and easy to prepare! The trick is to use a good non-stick pan and cook it over low-med heat (it gets burnt very easily). The recipe is adapted from Joy of Baking and is one of the trusted few websites I visit rather frequently (There's also a video that you can watch and follow closely!). I've posted the recipe below for your easy reference.

Buttermilk Pancakes Recipe:

1 cup (130 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons (28 grams) granulated white sugar
1 large egg, lightly beaten
1 cup (240 ml) buttermilk
3 tablespoons (40 grams) unsalted butter, melted
Plus extra melted butter for greasing the pan.

Buttermilk Pancakes: In a large bowl whisk together the flour, baking powder, baking soda, salt and sugar. In a separate bowl whisk together the egg, buttermilk, and melted butter. Make a well in the center of the dry ingredients and then pour in the egg mixture, all at once, and stir (with a rubber spatula or wooden spoon) just until combined. The batter should have some small lumps. (Do not over mix the batter or the pancakes will be tough.) (The pancake batter can be covered and stored in the refrigerator for up to 24 hours.)
Heat a frying pan or griddle over medium high heat until a few sprinkles of water dropped on the pan or griddle splatter. Adjust the temperature as needed. Can also use an electric griddle with the temperature set at 350 degrees F (180 degrees C). Using a piece of paper towel or a pastry brush, lightly brush the pan with melted butter or oil (or spray with a non stick vegetable spray.)

Using a small ladle or scoop, pour about 1/4 cup (60 ml) of pancake batter onto the hot pan, spacing the pancakes a few inches apart. When the bottoms of the pancakes are brown and bubbles start to appear on the top surfaces of the pancakes (2-3 minutes), turn over. Cook until lightly browned (about 1-2 minutes).
Repeat with remaining batter, brushing the pan with melted butter or oil between batches.

Serve immediately with butter and maple syrup or your favorite jam.

Makes about 8 - 4 inch (10 cm) pancakes.

To bake (or not to bake)

While I was eagerly looking for an affable and affordable web designer and poring over old contacts looking for the equivalent in printing (oh yes my own cake box!), my dear hubby posed this question last night, "Dear, don't get me wrong, but are you doing this for interest or living?"

Ok there goes your money hun...

This started and has always been my interest but somehow I wished for something different or more. It was (and still is) fun baking for family and friends and friends of friends although sometimes alittle frustrating (when the cakes turned out wrong) and looking at the piles of mess to clear aftermath. The thing is I thought this would be the next step to take before jumping the wagon of aspiring baker/entrepreneurs.

So my dear hun, as with the famed book title,I also aim to bake, pray and hope that someone will love to eat it again and again!!! And yes, I do pray the 'little' investments made will go a long way...

Reinvent, Revitalise and Revamp!

After long (overdue) thoughts and consideration, I've decided to quit my job and focus on Heychocolat Bakeshop. For a start, Heychocolat will be focusing on what this blog first started out with: Darn Good Chocolate Cake and other chocolatey desserts - Feel Good Brownies and Triple Indulgence Cheesecake (I will upload the pics soon!).

Prices have also been adjusted due to rising ingredient costs! I'm really bad with pricing and prices weren't adjusted for the past 3 years. But for all Heychocolat Fans (Just Click Like on Heychocolat FB page), you will enjoy 10% off all purchases for the first 100 fans only (excluding delivery charges if any). Afternote: I'm also really bad with tech stuff and a scatterbrain so you may want to email me with your name and email address just to confirm! As for starting my own bakery/cafe, plans are underway and to my surprise, my dad actually helped sourced for a shop space near my place and asked if I wanted to takeover but with the current constraints, I'll just have to take a step at a time before jumping to run my own.
